Vegan Food to the Rescue

Today has been one of those days... the first day of school for 2022 and to make that even more of a drama - there was NO power. Apart from sore ears, non stop talking from 5 - 8 am, it went off relatively without a hitch. Thankfully we all showered last night. Just as we leave the house, power back on - yep, that was to be expected. The rest of the day went by unhindered, until dinner time.


In my true form, I'm not always the most organised when it comes to being prepped for dinner, I always have the food (meal planner here) I just don't always have it ready when I should. In the past couple of days this lack of organisation has seen me over defrost steak (guilty as charged) and then today, naturally, the power went back out.


It was already after 5pm and time to start thinking a little bit more about dinner, lucky for me, I have a camp gas cooker (rescued me also for my morning coffee), however, I had no meat out of the freezer for MR 13. Hmmm... I surveyed what I had on the menu and opted for soul nourishing Butter 'Chicken' (Tofu). No defrosting needed and everything else was in the pantry. Score.



This dinner was absolutely delicious, though I did put my own spin on it a little, I specifically left the coriander out, because, well, coriander. I also served it with coconut yoghurt to help douse the little burn from the slightly to heavy a hand with the chili flakes.



The most AMAZING this about this dish is that MR 13 devoured it within seconds. What was priceless though was the look on his face when I asked him what he thinks he just ate? Being the cheeky one that he is "I dunno, some vegan crap" came the response. Well, guess what sunshine, that vegan crap, you just scoffed it!!
